Peaberry coffee is a naturally occurring coffee bean mutation where only one round seed develops inside the coffee cherry instead of the usual two flat-sided beans. This gives the bean a small, oval or pea-like shape—hence the name “peaberry.” Peaberries are often separated during processing and are prized for their bright acidity, concentrated flavor, and smooth body. They occur in about 5–10% of a coffee harvest.
